The Head Chef is fine with taking on a strong CDP in Pastry but you must have an obsession with Pastry and want to develop further.
You will need to have had a stable a career – no job hopping – 1 – 2 years per role. You need to have experience in pastry in a professional kitchen in a hotel or restaurants etc.
